Yummy Squash Casserole



  • 3 lb. yellow squash – sliced
  • 1 onion- chopped
  • 8 oz. whipping cream
  • 4 Tbl. butter
  • 8 oz. parmesan cheese
  • 2 Tbl. cornstarch
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 2,  4 ½ oz. cans shrimp
  • 20 Ritz crackers


  1. Cook squash & onion. Drain.
  2. Mix next 6 ingredients (cream, butter, cheese, cornstarch, salt, pepper) then cook over        low heat, making a sauce.
  3. Mix all ingredients except crackers in a 2 qt. casserole dish.
  4. Cover with crackers.
  5. Cook 20-30 min. at 350 degrees.
