Reuben Dip

1 cup mayonnaise
1 cup sour cream
1 (15 ounce) can sauerkraut, drained and chopped
2 cups (1 pound) chopped corned beef
2 cups (1 pound) shredded Swiss cheese
1 small onion, finely chopped
2 tablespoons prepared horseradish
1 tablespoon dark mustard
2 teaspoons caraway seeds

Preheat oven to 325 degrees. Mix all ingredients, and pour into a 2 quart casserole dis. Bake for 30 – 40 minutes,
or until the top has become brown and bubbly around the edges.
Make ahead of time so the flavors will blend. Wait to heat it until just before serving. Serve hot. Reheats well.
Serve with party rye bread, thick chips or toasted French bread points.

Note: You can buy corned beef at the deli counter. Have it thinly sliced, then dice it before putting in the recipe.
You can use low-fat ingredients – mayonnaise, sour cream and Swiss cheese.
